White Chili with Chicken – Gluten & Dairy Free

This white chili comes together in about 30 minutes and is sure to please everyone! This chili is filling and satisfying.

Ingredients

1 yellow onion, chopped
1 lb raw chicken, cut into bite-size pieces
1 Tbsp minced garlic
2 cups chicken broth
2 15.5-oz cans navy beans
2 7-oz cans diced green chilies
2 tsp chili powder
1 tsp cumin
1 tsp dried oregano
8 oz dairy-free cream cheese

Directions

Heat a large pot on medium-low and drizzle some oil into the pot.
Saute the onion until browned. This will give the chili better flavor than simply sauteing until aromatic.

Add the chicken and cook just until white (the centers of the chicken will still be raw).
Don't cook until cooked through because the chicken will become overcooked while the soup simmers.

Add the broth, beans, green chilies, seasonings, and cream cheese (cubed) to the pot.
Stir to combine and bring to a boil.

Allow to simmer 10 minutes, stirring occasionally.
Remove from heat and serve topped with dairy-free cheddar cheese and corn chips.
