One-Pot Mexican Beef Rice
This one-pot meal comes together in about 30 minutes and is a great option for a weeknight dinner.

2 Tbsp olive or coconut oil | |
1 onion, chopped | |
1 Tbsp minced garlic | |
1 lb ground beef, uncooked | |
2 Tbsp taco seasoning or 1 packet of taco seasoning; make sure it's gluten-free! | |
1 cup salsa | |
1 can corn, drained | |
1 can black beans, drained | |
1 cup rice, uncooked | |
3 cups beef broth make sure it's gluten-free |

In a large skillet, heat 2 Tbsp oil.
Sauté the chopped onion and minced garlic for a couple minutes.

Add the ground beef and cook thoroughly.

Once cooked through, add the taco seasoning and stir to combine.

Add the salsa, corn, black beans, uncooked rice, and beef broth. Stir to combine.

Cook 20 minutes, stirring frequently, on a simmer.
Once the rice is done remove from the heat and serve hot topped with dairy free cheese.
