Naturally Gluten Free Brownies

These brownies are quick & easy to make, naturally gluten-free, and can be made dairy-free, also. Two very important things to know about this recipe: don’t double it and don’t overbake it. I have tried to double this recipe before and the whole dish was ruined. Of course, you could make 2 dishes of brownies, but doubling this recipe in one dish has never worked for me.

Fair warning, these brownies might not last to the end of the day you bake them! They are delicious and slightly fudgy. My favorites are the edge pieces! As seen in my featured image for this recipe, I couldn’t get a picture fast enough before we’d eaten some of the brownies!

This is a small recipe that fits in no more than an 8×8 inch or 5×9 inch dish.

Ingredients

6 Tbsp dairy-free butter this recipe works great for dairy butter, also
225 grams chocolate chips I like Enjoy Life brand, which is free from top allergens
160 grams sugar
2 eggs
8 grams cocoa powder make sure it's gluten free
20 grams corn starch

Directions

Preheat oven to 350*F.
In a small saucepan, melt on low the butter and chocolate chips. Once melted and smooth, remove from heat.

Stir in the eggs and beat well with a whisk.
Stir in the sugar and beat well.
Mark as complete

Add the cocoa powder and the corn starch and beat well for 1 minute until no longer grainy.
Mark as complete

Pour the brownie batter into a greased small baking dish (8x8 or 5x9) and smooth the top of the batter.

Bake for 25-30 minutes until the edges of the brownies start to pull away from the edges. Don't over bake.
While still warm, cut the brownies (I find a plastic knife works best).

Notes

Store in an air-tight container.
