Gluten-Free Turkey Noodle Soup
Hello and happy Tuesday! I hope you’re all staying warm as winter continues. I have a delicious turkey (or chicken) noodle soup recipe to share with you today! The ingredients are simple and the soup is done in about an hour.

2 turkey breast, uncooked and cut into cubes or 4 chicken breasts | |
2 cups celery, diced | |
2 cups carrots, diced | |
1 yellow onion, roughly chopped | |
2 quarts turkey broth or chicken broth. Make sure it's gluten-free. | |
1 tsp black pepper | |
1 tsp salt | |
2 tsp dried parsley | |
1/2 tsp paprika | |
1 Tbsp minced garlic | |
12 oz gluten-free short pasta | |
2 Tbsp neutral oil |
Directions

Mostly Cook the Turkey
In a large pot, heat the oil over medium heat. Add the raw, cubed turkey and sprinkle with the pepper, salt, paprika, parsley, and minced garlic.

Allow the turkey to cook most of the way; don't cook fully as it will make the meat tough.

Add the Veggies and Broth
Add the chopped onion, carrots, celery, and turkey broth. Stir to combine.

Allow to Simmer
Allow the soup to simmer for 20 minutes while you cook the pasta. Drain the pasta and set aside.

Scoop some pasta into a bowl and ladle to soup over it. Enjoy!

I keep the gluten-free pasta in a separate dish from the soup since combining it all makes the pasta become very soft and to fall apart.

Soup recipe looks delicious. I’ll try it soon with chicken. And your advise on holding the noodles seperately is a great idea.
