Gluten & Dairy Free Cheese Bread Rolls

Makes 10 rolls

When I went to search for some recipe ideas on gluten and dairy free cheese bread rolls I couldn’t find any. I couldn’t find anything close. This is still a work in progress so stay tuned for improvements in the recipe. This recipe is one of those foods that gluten/dairy free people may think they’ll never eat again but I won’t give up good and favored meals simply because of my dietary restrictions.

10 grams yeast
10 grams sugar
90 grams warm dairy-free milk soy milk works great; warm to 110* F
10 grams psyllium husk
150 grams warm water
160 grams tapioca starch or equivalent fine flour: potato starch, arrowroot flour
130 grams millet flour you can substitute buckwheat flour
25 grams sorghum flour
5 grams xanthan gum or 3 1/3 grams guar gum
5 grams salt
8 grams baking powder
1 egg, beaten
20 grams dairy-free butter, melted and cooled
100 grams vegan cheddar cheese I like VioLife Cheddar Shreds brand

Directions

Activate the yeast, sugar, and warm milk in a small bowl and allow to bloom 5-10 minutes.
Combine the psyllium husk and warm water in a small bowl and allow to gel about 5 minutes.

Combine the tapioca starch, millet flour, sorghum flour, xanthan gum, salt, and baking powder in a stand mixer.

Add to the stand mixer the egg, melted dairy-free butter, bloomed yeast, and psyllium gel and knead 5 minutes.
Gently mix in the vegan cheddar cheese shreds and thoroughly combine.

Cover the dough with plastic and allow to chill in the refrigerator for 1 hour.

Grease a muffin tin or baking dish.

Divide the dough into equal parts, weighing each on a scale to ensure they're all equal. I usually make 9-12 rolls with this recipe.

Flatten each piece of dough into a pancake shape.

Bring the edges into the center.

Roll the dough between your hands to form a smooth ball.

Proof the roll sin the muffin tin for 1 hour.
Preheat the oven to 375*F. Brush the unbaked rolls with an egg wash (one beaten egg with a sprinkle of salt).

Bake 20-22 minutes.
Remove from the oven and brush with melted butter and serve immediately.
