Gluten & Dairy-Free Beef Enchiladas

Hello and happy Saturday! Autumn is a great time to start making warm, homey meals. Beef enchiladas are easy to make, put together, and have ready in under and hour.

Most (or all) of the needed ingredients will already be in your kitchen so you won’t have to make a special trip to the grocery store. This recipe is perfect for a weeknight dinner and the leftovers (if you have any) warm up well in the microwave.

1 lb ground beef, raw
1 Tbsp dehydrated chopped onion or half an onion, chopped
1/2 tsp salt
1 tsp pepper
3/4 cup red salsa
1 Tbsp chili powder
1 tsp paprika
1 tsp cumin
12-16 corn tortillas
Red Enchilada Sauce
4 Tbsp oil
4 Tbsp gluten-free flour blend
3 Tbsp chili powder
2 tsp cumin
1 tsp granulated garlic powder
1/2 tsp salt
2 tsp dried oregano
2 pinches ground cinnamon
3 Tbsp tomato paste
2.5 cups vegetable or beef broth
2 tsp apple cider vinegar

Brown the ground beef and season with the dehydrated onion, salt, pepper, salsa, chili powder, paprika, cumin, and and 1/2 cup of water.
Allow to cook on low for 5 minutes and remove from heat.

Meanwhile, make the enchilada sauce in a medium saucepan by heating the oil until very warm.
Whisk in, until smooth, the gluten-free flour, chili powder, cumin, granulated garlic, salt, dried oregano, and cinnamon.

Whisk in the tomato paste, broth, and apple cider vinegar.
Simmer on low for about 5 minutes and remove from heat.

Steam the corn tortillas. Pre-heat the oven to 350* F. Meanwhile, spoon some sauce into the bottom of a 9x13 baking dish (only enough to cover the bottom).
Spoon some of the beef mixture into each tortilla and roll closed.

Place the filled and rolled enchiladas seam-side down into the baking dish.
Spoon the enchilada sauce over the enchiladas to cover completely. Sprinkle with dairy-free cheese and bake 20 minutes.
