Product Review: Kinnikinnick Gluten Free Angel Food Cake

This is a product review as well as some important tips!

This angel food cake mix is simple to make and whips up quickly. The needed ingredients are 12 egg whites (save your 12 egg yolks for my custard recipe!), 2 tsp vanilla extract (make sure it’s gluten free), and the Kinnikinnick gluten free angel food cake mix. 

I highly recommend using a stand mixer for this recipe; 12 egg whites beats up into a large amount! At a minimum use a very large bowl and an electric hand mixer. It would take a great amount of arm power to whip these egg whites with a whisk!

Be sure to gently fold the cake mix into the egg whites once they’re at stiff peaks but ensure it is all mixed well. 

As with all gluten free baking, I suggest baking this for the entirety of the recommended baking time of 35 minutes. This ensures the cake is thoroughly baked.

This angel food cake isn’t too sweet and came out light and fluffy. One would not be able to taste or tell the difference between this gluten free angel food cake and a “regular” gluten-containing angel food cake.

I happened to find by accident some dairy free coconut cool whip in the freezer aisle next to the dairy cool whip near the ice cream. It’s called CocoWhip by So Delicious. A nice slice of this angel food cake, topped with a generous portion of sliced strawberries (I just had to use this amount of strawberries in my picture; the strawberries were going  bad!), and a large dollop of coconut cool whip was just the right end to my dinner. 

The instructions on the box are simple to follow and concise. I hope that you enjoy making this as much as I did!

This is the angel food cake pan I have. The shape of this pan is necessary for the success of your bake. A straight-sided baking dish (preferably with a removeable bottom) with a column in the center is important so this cake bakes AND cools correctly. Don’t grease the pan! The cake needs to be stuck to the inside of the pan so that it can cool upside down after baking and not fall out of the pan. It is simple to remove the cake with a slanted knife once cooled. 

Thus, a Bundt cake pan or a decorative cake pan won’t work because the cake is exteriorly sticky and will tear when you try to remove it from that kind of baking pan.
