Is Gluten Free Wheat Starch Caputo Flour Actually Gluten Free?

Caputo Flour is a wheat flour with the gluten proteins/wheat starch removed. The FDA has certified Caputo Flour as gluten free with less than 20 PPM. While this product is gluten free, it is not wheat free. This is a great, safe product for those with Celiac Disease, but should not be consumed by anyone with a wheat allergy.
