Four Gluten & Dairy-Free Pumpkin Desserts

Hello and happy Monday! I have compiled a list of gluten & dairy-free, autumnal pumpkin dessert recipes for better ease of finding them. I plan to add to this compilation as I make more pumpkin recipes this Autumn, so stay tuned!

I hope you enjoy making these pumpkin-themed desserts as much as I did; I trust your family and friends will thoroughly enjoy them! All of my recipes are gluten and dairy-free. 

First, and most popular, is my pumpkin hand pie recipe. While this recipe does take some experience to manage getting the hand pies together, this recipe is fun to tackle with your little ones for some memory-making and the result is quite rewarding! Give yourself a couple hours to work on this as the dough will need to be chilled.

Pumpkin Hand Pies

Second, my widely popular recipe and very easy to make, is my pumpkin spice snickerdoodlesThis recipe is versatile and can be made with a variety of gluten-free flour blends. Depending on what gluten-free flour blend base you use, these snickerdoodles will turn out differently. An almond flour base will result in cookies similar to graham crackers in texture. A rice flour base will result in the most similar to typical snickerdoodles made with wheat flour. I don’t recommend using Bob’s Red Mill grain-free flour that has a base of garbanzo bean flour and black bean flour. This will make the cookies taste like bland and stale and you may have a difficult time sweetening the dough adequately. Happy baking!

Pumpkin Spice Snickerdoodles

Third, my quite simple and easy recipe, is Pumpkin Bread Cookies. Since gluten-free baking often requires dough and batter to rest in the refrigerator for a couple hours before baking to allow the fats and starches to combine, this dough does need to rest for about 2 hours (or overnight, if desired) before baking. Otherwise, this dough bakes quickly and the cookies can be enjoyed plain or can be iced according to the icing recipe that can be found at the end of this recipe post.

Pumpkin Bread Cookies

Finally, my delightfully surprising and not-as-hard-as-it-looks recipe for Pumpkin Peekaboo Cake. I had a wonderful time making and baking this cake. It’s not too sweet so it can be enjoyed at breakfast with coffee or after dinner as a dessert. The pumpkin center is actually pumpkin bread (not cake) while the outer layer is white cake. This recipe post is a two-for-one as it contains 2 recipes: one for the pumpkin bread and one for the white cake. I know you’ll enjoy this one!
