Hello and happy Saturday! I have compiled all my sourdough recipes and sourdough-related posts into one place so you can easily access everything you’ll need regarding sourdough baked goods and sourdough starter. 

First, my most popular sourdough recipe by far: gluten & dairy-free sourdough cinnamon rolls with dairy-free cream cheese icing. The rolls are soft and slightly chewy thanks to the gluten-free sourdough, the filling is just right, not too sweet or bitter (like some recipes that call for too much cinnamon!), and the dairy-free cream cheese icing is just the right amount to cover the rolls but not make them drown in it.

This recipes does take some time (about 8-9 hours) due to the sourdough but allows the flavor to develop beautifully!

Second, my ever-faithful and reliable bread recipe: gluten-free sourdough bread loaf. This can be made in a boule (round-loaf shape) in a Dutch oven or in a typical bread-loaf shape in a bread pan. The bread has that perfect sourdough taste, the crust is beautifully developed, and the crumb is artisan-worthy!

Whether you decide to make your own sourdough starter or desire to purchase some dehydrated for a one-time use, you won’t be disappointed with this recipe!

Third, here is my simple gluten-free sourdough loaf recipe that contains fewer gluten-free flours. If you are just starting out or have a small panty or only a small amount of gluten-free flours, this is the recipe for you! It uses brown rice flour, white rice flour, potato starch, tapioca starch, and sorghum or millet flour.

I have only good news: one, the health benefits are increased because of the sourdough cultures which help maintain gut-health; two, the gluten-free sourdough banana bread takes less time to ferment/rise than regular, plain sourdough bread; three, this bread is delicious! Fifth, below are my instructions for how to dehydrate your sourdough starter. Dehydrating sourdough starter is important for several reasons. In situations of prolonged inability to care for your sourdough starter, such as moving to a different city or state, traveling for several weeks, or you’ve just had a new baby and won’t have time to be concerned with sourdough starter, dehydrating it gives you an opportunity to “freeze in time” your sourdough starter and the maturity it’s at. This allows you to pick it back up when you’re ready. 

Another good reason to periodically dehydrate your sourdough starter is to have a back up or insurance against your live sourdough starter dying. Sometimes, unexpectedly of course, your sourdough starter may “die” by becoming infested with mold. Or you may accidentally drop your sourdough starter jar and it gets filled with tiny glass shards. Both instances are situations where you must throw away your starter for health and safety reasons.

Sixth, how to rehydrate your dehydrated sourdough starter. Below you’ll find my instructions for how to rehydrate your sourdough starter along with answers to frequently-asked questions. A kitchen scale is necessary for accurate measurement of ingredients. Too little water/too much flour can make your starter so dry that it may die. Too much water/too little flour can over-hydrate your starter and it will won’t be able to rise.
