All-Natural Fruit Gummies

These all-natural fruit juice gummies are surprisingly easy to make and can be whipped up in minutes. The longest task of this recipe is piping the juice into the molds. After some trial and error, I found that adding a few drops of fruit extract will greatly enhance the flavor of the gummies. When I made the first batch I used straight pomegranate cherry juice and lemon juice and there was almost imperceptible flavor. The second batch I made was orange (using orange juice concentrate and orange juice extract) and the flavor much better with the extract!

3/4 cup all-natural fruit juice Concentrate works great
1/4 cup lemon or lime juice
2 Tbsp honey
3 Tbsp gelatin powder Vital Proteins brand beef gelatin is a good choice
4-5 drops fruit extract

Directions

Into a small saucepan add all the ingredients, whisk until smooth, and allow the gelatin to bloom for about 5 minutes. The texture should look similar to applesauce.

Turn the burner to low and whisk until everything is smooth and completely liquid. Heat until hot but do not allow it to boil.

Working quickly, use a pipette syringe to pour the juice into the molds. You may have to gently reheat the saucepan halfway through this process to ensure everything remains liquidy and doesn't start to gel in the pot.

Once all the juice has been poured into the molds, place the molds in the refrigerator and allow to chill for 30 minutes.

If the gummies are too sticky you and place them in a bowl with cornstarch and toss them to ensure they're covered on all sides and allow to sit for a few hours.
I recommend keeping the gummies in an air-tight container in the refrigerator to maintain freshness.
