Product Review: Irish Soda Bread from Desert Bloom Bakery – Plainview, TX

Heather at Desert Bloom Bakery in Plainview, TX makes delicious grab-and-go baking mixes and ready to eat gluten and dairy free baked goods. I was overjoyed to have met her at the Wolfforth, TX Saturday farmer’s market. My family and I had been looking for some booths that had gluten AND dairy free foods/products for me to check out and my sweet mother-in-law found Desert Bloom Bakery! Heather was so personable and friendly and talked to me about her products and the ingredients. What I appreciated most is that she reassured me of the quality of her ingredients, that they’re free of cross-contact with gluten, and free of any dairy products. 

I purchased a few products from Heather; a strawberry cupcake, a rainbow Rice Krispie treat, and a bag of Irish Soda Bread mix. I highly recommend that if you’re at the Wolfforth Farmer’s Market to stop by her booth!

The Irish soda bread mix came with clear, concise instructions. All you’ll need in addition to her bread mix is 2 cups non-dairy milk (I use soy milk), 2 Tbsp white or apple cider vinegar, and 1 egg. I always recommend mixing up batter/dough in a large bowl so there’s room to ensure everything is thoroughly combined.

Of great importance is to ensure your bread is completely/thoroughly baked before removing from the oven. Gluten-free bread takes longer to bake than “regular,” gluten-containing bread. You can check your bread to ensure it is done by using a food thermometer. Your bread should be between 160-185*F internally before you remove it from baking in the oven.

The Irish soda bread came out of the oven with a moderate crust and a moist, springy crumb. The volume of the bread batter and then the baked bread was perfect for my 9×5 inch loaf pan.

I find it’s easiest to slice all the bread after it has cooled and then store it in the fridge to make it easier later when I want to pull out a couple slices to toast. I recommend storing your bread in the refrigerator, wrapped in a cloth, and stored either in a gallon plastic zip bag or in a bread box, since gluten-free bread has little to no preservatives and will spoil more quickly than store-bought bread.
